Our stake purchased a Hitachi CP-BW301WN almost 2 years ago. We have been happy with it. It can adjust for horizontal as well as vertical keystone. This allows the projector to be placed off center with respect to the screen, with the projected image squared off and centered on the screen.

I did find those settings. My assumption was that if I selected the L-Mono option, yes, I would only get English over the HDMI, but also that the right audio output on the back of the receiver would be switched to English. I had on hand a 2.5 mm to RCA splitter and used that to separate the left and right at the projector audio output and connected just the left to the crab box. I would imagine the best location to extend HD to would be the pulpit. This can be done several ways, one option would be a HDMI to Coax directly to the pulpit. There are systems you can get that are sub $300.00. See my post here which describes my experience doing this, but with HDMI over cat 6.
