When going into Leader & Clerk Resources---> Membership--->Member List--->(Choose a member from the list)--->View Member Profile--->Household.
Am I correct in thinking that those listed here under household are only those in the family who are members of the church? And if I want to see the entire family including non-members, they are listed under Family?

I don't have access to LCR, so I'm not 100% certain if you are looking at "Household" or what I call the "genealogical" section.
The Household will only be members and only those living with the Head of Household, and only those for which you have a membership record for. If a child dies or moves out, the record will be removed from the ward and they will disappear from the Household.
The "genealogical" section is different. You'll see living and dead, present and absent, member and non-member, to the extent that the information has been recorded.

What russellhltn is describing is the information under the Family tab. For example my daughter is living with me but attending the YSA ward, since her records are in that ward she doesn't show on my household tab.
Sometimes adult children my be listed in their own household even if they are living with the Head of Household.
