Removing member from distribution list
We have a member who does not want to receive Single Adult messages sent from the stake via the "Send a Message" application. Is there a way to flag their member record in some way so they do not receive these messages (vs. having to remember to uncheck them from the recipient list)?

No, there isn't. If the member is not a Single Adult, then the better solution is to record the marriage.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.

Have they set their email address visibility setting to Ward Visibility?

There are 2 email address fields available on their membership record: household email and individual email. The Send A Message tool only sends to the individual email. If you move their individual email to the household email field and empty the individual email field, that will remove them from the distribution list without losing the email address availability for individual contact.

If the stake sender is considered a "leader" (which seems likely since they're using Send a Message), that setting won't help.

Unfortunately this would remove them from all Send a Message messages. I wonder how often single adult messages are being sent. If there's a message sent about activities every week or two targeting single adults, I suspect there may be others on the list who also may be getting annoyed but haven't brought it up. It might be worth setting up an opt-in newsletter or mailing list outside of the Send a Message system, and using Send a Message only to invite interested single adults in joining the external list once or twice a year.
