SOLUTION

For Google home, simply ask to talk to gospel voice. You can ask for specific books, chapters and scriptures.

For echo, just ask to enable gospel voice

In the Gospel Library app, you can select the male voice or female voice by changing the settings.
Go to: Settings | Audio Settings
You might explore if you have that option in Google Home.

Note that there's more than one male voice reading the scriptures (for example, the readers in 1 Nephi, Jarom, and Alma are different). So if you send feedback, I'd recommend specifying which voice you don't like (where in the scriptures you were listening).
