Can I download the directory to my IPad?
Is it possible to download the ward and/or stake directory onto my IPad?

The way I'd recommend is to download the LDS Tools App (see Apple Mobile Apps on lds.org). That will let you see all the members and callings at the ward and stake level for your stake.
