I've lived in our current stake for 7 years and we've never had a Stake Directory.
We used to print out monthly directories with a calendar attached. When the person who did that was released, we no longer printed those.
When someone requests a printed version, one of our clerks will login to lds.org and print one from the website.
A word of warning, when you have someone print the calendar, remember to deselect (I think that works - double check) the private calendars that you don't want to show up on the printed version.
