Has anyone setup this copier with a scan-to-email function - It's fighting me hard on this one.

I'm sure I'm not telling you anything you don't know, but MFPs are usually designed to work with a company email system (like Exchange). Trying to get it to work with some random email provider, across the internet, and through the meetinghouse firewall could get "interesting".
