The projector we use in the chapel at our stake center is many years old needs to be replaced. I've been asked to research options for a replacement. Anyone have any recommendations on makes/models that are working well in your stake center chapels? Suggestions on minimum lumens for a new one? This projector's main function would be to project onto the chapel screen.

You should have a discussion with FM. At least in my area, they provide and replace as needed.
If the stake buys it, it will come out of the budget intended for activities.
It's possible all it needs is a new bulb. The bulbs can lose quite a bit of brightness before the the projector indicates it's time to replace it.
