As a counselor in a bishopric (and a stake technology specialist), I can no longer see 'Membership Information' details of an individual record in the Member Tools iPhone app. The only details I currently see are Full name, gender and birth date. Previously, until a few weeks ago, I could see much more, including place of birth, priesthood, mission, parents, temple recommend status, etc.
Was there a change in the app to block those details?

I wonder if there was a sync problem. Sundays are notoriously bad days to sync your data and I have seen unpredictable results when the sync times-out because of high server load. I suggest you sync again during the week and see if that fixes your visibility.
Another option is to provide feedback from within the app - that feedback goes to the developers and includes device details to help them in sorting out the problem. You may not receive an individualized response, though.
