I'm curious what other wards are doing for tithing settlement during COVID.
Our sacrament mtgs. are now in person, though sparsely attended.
Are you doing a hybrid model of in-person with the bishop and virtual?
Are you signing people up with something like signup-genius since many people aren't in the building to do the old school signup on the bishop's door?
I'm gathering ideas for the wards in my stake.

In the past our ward has assigned times and asked us to trade or reschedule with the executive secretary if that time didn't work for us.

Sent out ward e-mail offering in-person or virtual (zoom) option on dates the Bishop selected. Members reply with their choice and I put them on the schedule. So far about 30% requesting in-person, 70% virtual.

We have used Signup genius for people to sign up for the available slots, with paper on the clerk's door as an alternate way. This year we are trying no paper sign-ups at all. We are also attempting to do 100% Zoom based appointments. It is the same zoom link for all appointments and people just wait in the virtual waiting room for the Bishop to finish the current appointment and let them in. Members are instructed to contact ward Exec. Sec. if they need something different. So far so good with no requests for face to face appointments yet. It isn't ideal from a human interaction perspective, but then, neither has this whole year.

As far as anyone knows, is it possible/acceptable to do phone Tithing Settlement. We have members in our Ward who really shouldn't do in person and also don't have computers, so are just doing sacrament in their homes and no meetings, as it was before the Zoom/Church platform. Has anyone heard anything about this?

I recall that the tithing settlement instructions this year indicated that the interviews could be done virtually if needed. If the bishop is good with it, I see no problem here. And I am certain that the bishop would rather hear from a member and let them declare their tithing status than for the bishop to try and determine that status on his own.
