The stake might also still be deciding what time to hold the various sessions. I guess they could add stake conference as an "all-day event" on Saturday and Sunday, but they'd have to update it later when they decide what time to have the sessions. In YSA stakes around BYU, if there's a BYU football game scheduled for the Saturday of stake conference, it's common for the stake to set the time of the stake conference sessions earlier or later to avoid conflicting with the game. That requires waiting for the football schedule to be announced.
There can also be scheduling conflicts when trying to schedule a building to hold stake conference in, that aren't known until closer to the date. That may not apply to stakes that have a dedicated stake center and/or meetinghouses with broadcasting set up.
