tracking sacrament speakers
is there any way to keep track of sacrament speakers on this site or mls?

There are no tools provided for that. You might be able to do with with custom fields in MLS, but I think you'll find it's a bit clunky. IIRC, the reporting on the custom fields left a lot to be desired - so they weren't used much.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.

And if you decide to use Custom Fields in MLS, keep in mind that the membership side of MLS, which contains those fields, is going away in the not too distant future.

In our ward we share a google doc spreadsheet among the Bishopric members. One of the clerks updates it after each Sacrament meeting, with it sorted in date order. to record the speakers and prayers. The Bishopric members can easily sort it by name to see when a given member last spoke or prayed in Sacrament meeting. It doesn't exactly tell you who hasn't spoken, but with it sorted by name and compared to a ward directory, you would easily see what names aren't there at all.
