It seems that the sealing ordinance does not show up on the membership profile under “ordinances” or in Tools in “Membership Information” if there has been a divorce. Is that correct? It will still show the children in that family were BIC but does not list the ordinance for the parent, or it says “sealed to parents.” If this is correct, how do we know that there was a previous sealing other than asking the person for the information directly?

It's been years since I've actually handled membership records, but there used to be a flag "sealed to prior spouse" that would be set. It was it's own field and would simply have a "y" in it if that was the case.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.

In Leader and Clerk Resources:
- On the Individual tab, the Sealed to Spouse field will show "Yes" for a member who has a current sealing to spouse, regardless of whether the member is currently married to that spouse.
- On the Family tab, a member who has remarried and is still sealed to their prior spouse will have a note that indicates that.
- The quarterly report detail accurately reflects the member's status. A divorced member who is still sealed to their former spouse is counted under "Individuals who are sealed to a spouse in the temple."

The prior marriage information, including sealing information, is displayed in these cases.
