Speech to Text - Transcription/Translation

We are looking at ways to make transcription of Patriarchal Blessing easier. There are speech to text services in desktop software like Word or Dragon and SaaS services like Otter or Rev. I have concerns about privacy (CCPA and CPRA for us in California) and retention of the content for model training. Anyone using something or know of a possible church approved/owned solution?
