Why is my official 2025 NZ tax statement still not showing on my LDS donations acct?

How were the donations made?
If via on-line, then you should be able to see them online using the same account. Make sure you click on "Donor Statements" on the left side.
If to the ward, then you may need to ask the clerk for a statement. If the donations weren't connected to your MRN (or at least not the MRN on your account), you won't see it online.
If direct to church headquarters, (such as in-kind donations), you'll have to get a statement from them.
Note that it's not possible to donate as a couple. All donations have to be processed under a single MRN. If your spouse did the donations it will be on their account and you can't see it unless they've gone into settings and checked the box to allow the spouse to see donations.

They were done online and I got an email saying it was ready and to go to my acct to view it but when I get there it has no option for 2025 under where it says select year. It only goes up to 2024.

So we file "2024" for what happened in 2024 in April 2025.
What you describe is perfectly normal for us.

Our tax year is different to the US. So in NZ our tax year is from the 1st of April to the 31st of March. So when I go to 2024 it shows my tax from 23-24. So this one will show 24-25 and should be under 2025.

Ah. When is the church legally required to produce the documents? In the US, I think that's end of January, and the tax forms for us were dated Jan 21st. In 2022, they appeared on Jan 27th. So I wouldn't expect it until just days before the deadline.
