I'm a SD with +3 years of experience.
I was wondering how can I collaborate with the Church apps as a developer by working in actual code, knowing what stacks they use and developing new apps (I've been thinking a lot about making an app for meetings planning).

The Windows version of the Gospel Library app is developed by a volunteer team. All of the other Church apps (for iOS and Android) are developed internally by employees. If you go to Careers.ChurchofJesusChrist.org you can search for job openings. Paid internship opportunities are also listed there.
That said, if you have an idea, don't wait for it to become "official"! There are a lot of things that can be done by third-party developers to bless Church members. You should be aware that the Church is careful to protect privacy and sensitive information, and there are no public APIs for membership data or Church Account authentication. But there's a lot that can be done outside of that.

Anything involving member information is touchy. The only safe way I'm aware of is if members enter/upload their own information. (For example, if they sign up for it.) Anyone uploading information about other members outside of their family is likely a non-starter.

Good clarification, yes – I didn't mean to imply that you should create your own membership database because of the absence of Church APIs – rather, I meant that there are a lot of helpful apps and tools you could create that don't rely on membership information at all.
