Finding People
I wish we were able to see the people who live in the stake next to us because I just had trek with my neighboring stake and I can't find the information for any of them

That is correct. It's best to get contact information from them before the end of the event. Even if they are in your stake, it might be set to private.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.

We've sometimes had a unit from another stake meet in our building and they don't even allow us to have contact info with them because they're out of our stake.
I don't know your reasons for contacting someone from the other stake, but your best resource would probably be your ward/stake YM/YW leaders. Assuming your reasons are appropriate, they can likely at least get you in contact with someone in the other stake who can get you in contact with the people in the other stake. If that doesn't work, your ward clerk can look up leaders from the other stake and try to get you in contact with them.
