Track endowments

I can't find any reports nor create one which will show me members who received their endowment in a given year. For example, I would like to know how many received their endowment in 2025. Maybe it is possible and that I just haven't been able to find it yet.

You could use the Create a Report feature in LCR to list all those who are endowed and then list the endowment date. Once the report runs you can sort it by that date to see the most recent ones in your stake.
